Hello everyone, welcome to Beyond The Bayou Blog! I’m Anne Carter, and today I’m excited to share with you a delicious recipe: lazy cake. This cake also known as “no-bake chocolate biscuit cake” or “chocolate refrigerator cake,” is a simple dessert that requires no baking.

On a rainy evening after a long day at work, I wanted something sweet but didn’t feel like baking. I remembered a simple recipe I had saved, which was a Lazy Cake. The sudden thought resonating with my current situation made me prepare a lazy cake as it takes just 10 minutes to prepare.

I melted chocolate and butter, then mixed in crushed biscuits. The sweet smell filled my kitchen, making me feel relaxed. Once the cake was chilled, I cut a slice and enjoyed its comforting taste. It was easy to make and brought me happiness.

But then, I thought something was missing. Umm.. what was that? Ohhh… It was Coconut Pecan Cookies which I was craving and wanted to try with this cake as I prepared a batch of these cookies last week.

So, do you want to try this lazy cake recipe? If yes, just stick to our recipe for the next few minutes and I can assure you, you will end up having something amazing.

What Makes the Lazy Cake So Good?

  1. Easy as Pie (or Cake):
    • Lives up to its name: Lazy Cake is incredibly easy to make.
    • Perfect for lazy days when you just want to chill out.
    • Simply mix a few ingredients together and chill in the fridge.
  2. Nostalgic Comfort:
    • Reminiscent of childhood summers, particularly in the Middle East.
    • A slice of cold chocolate biscuit cake is refreshing on hot days.
  3. Accessible to Everyone:
    • No need for fancy equipment or baking skills.
    • Even those who aren’t keen on baking, like my dad, can make it.
    • Doesn’t require an oven or mixer, just a few basic ingredients.
  4. Versatile and Customizable:
    • A great activity to do with children.
    • Once the butter is melted, kids can take over the mixing.
    • They love making it and eating it afterward.

Here Are Some Additional Tips!

  1. Crushin’ Time: Wanna speed up biscuit-breaking? Toss ’em in a zip bag and give ’em a good smash with something heavy like a rolling pin. It’s way quicker than doing it by hand!
  2. No Processor, No Problem: Skip the food processor for this one. We want those cookies in small pieces, not crumbs. Trust me, it’ll make all the difference.
  3. Wrap it Up: Want your lazy cake to look extra fancy? Add an extra layer of foil paper before freezing. It not only helps shape the log but also gives it a smooth finish.
  4. Biscuits vs. Cookies: Fun fact! In some places like the Middle East and parts of Europe, they call cookies “biscuits.” It’s like a tasty little language lesson!
  5. Foil Foibles: Foil can be a sticky situation with chocolate. To avoid a messy unwrap, start with parchment paper or wrapping, then add the foil. Smooth sailing every time!

Notes

  • If you want to speed up the process of breaking the biscuits, you can place them in a zip bag and crush them with a heavy object.
  • Avoid using a food processor to break the biscuits, as it’s better to have them in small pieces rather than fully crushed.
  • Adding an extra layer of foil paper before wrapping can help with shaping the log and achieving smooth edges.
  • Keep in mind that “biscuits” refers to cookies, a common term used in the Middle East and some European countries.
  • When wrapping the log, start with wrapping or parchment paper first, then add the foil. Foil tends to stick to the chocolate, making it difficult to unwrap later.
