I like this rice milk beverage as Horchata is often low in fat and cholesterol-free. It provides carbohydrates, calcium from the milk, and a hint of protein from the rice. Making this drink is not a very difficult task as it just takes 10 minutes at the moment to present among your guests.

Equipment

  • Blender
  • Pitcher or container with a lid
  • Fine mesh strainer or cheesecloth

Ingredients

  • 1 1/2 cups uncooked long-grain white rice
  • 2 Mexican cinnamon sticks
  • 4 cups hot water
  • 2 cups milk or almond milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • â…“ – 1/2 cups granulated sugar to taste

Instructions

  • Blend rice, 2 cups of hot water, and Mexican cinnamon sticks until roughly ground.
  • Add remaining water and blend again.
  • Pour into a container and refrigerate overnight or for at least 8 hours.
  • Strain the mixture into a pitcher, discarding the rice.
  • Stir in milk, vanilla, ground cinnamon, and sugar to taste.
  • Chill until ready to serve, then stir well and serve over ice.
