– 2 1/4 Cups All Purpose Flour – 1 Tablespoon Baking Powder – 3 Tablespoons Sugar – 1/2 Teaspoon Salt – 1 Teaspoon Cinnamon – 2 Large Eggs Separated – 1/2 Cup Vegetable Oil – 2 Cups Milk – 1 Teaspoon Vanilla Extract
– Preheat waffle iron and spray with non-stick cooking spray. – Whisk together flour, baking powder, sugar, salt, and cinnamon in a large bowl. – Beat egg whites until stiff peaks form in a medium bowl; set aside.
– In another medium bowl, mix egg yolks, vegetable oil, milk, and vanilla extract. – Combine egg yolk mixture with dry ingredients, mix well. – Gently fold in beaten egg whites.
– Pour batter onto hot waffle iron, cook as per manufacturer’s directions. – Serve waffles immediately with desired toppings.
