Back in college, my friends and I often experimented with cooking, trying out new recipes to break the monotony of dorm food. One evening, we stumbled upon coronation chicken while browsing through old cookbooks at a thrift store. Intrigued by its royal origins, we decided to give it a try.

Ingredients

  • 6 skinless boneless chicken breast halves
  • â…“ cup sultana raisins
  • 1 1 pound large mango, peeled, thinly sliced
  • â…” cup mayonnaise
  • 1 teaspoon mild curry powder
  • 1 tablespoon mango chutney
  • 1 teaspoon fresh lemon juice
  • 1 pinch salt and ground black pepper
  • ¾ cup toasted cashews Optional

Instructions

  • Poach chicken in boiling water for 20 minutes until cooked through. Drain, cool, and slice into strips.
  • In a large bowl, combine chicken strips, raisins, and half of the sliced mango.
  • In a medium bowl, mix mayonnaise, curry powder, mango chutney, lemon juice, salt, and pepper.
  • Gently toss the chicken mixture with the dressing until well coated. Add half of the toasted cashews.
  • Transfer the chicken salad to a serving platter and garnish with remaining mango slices and cashews.
