Ingredients

  • 1 20 oz. crushed pineapple not drained
  • 1 20 oz. pineapple chunks drained juice reserved
  • 1/2 cup brown sugar
  • 2 Tbsp cornstarch
  • 2 eggs beaten
  • 1 tsp vanilla extract
  • 1 Tbsp butter
  • 1/2 tsp cinnamon

Instructions

  • Drain the pineapple chunks, saving 1/4 cup of the juice.
  • Stir cornstarch into the reserved juice until it dissolves completely.
  • In a mixing bowl, combine the pineapples, brown sugar, beaten eggs, and vanilla extract.
  • Pour the dissolved cornstarch mixture into the bowl with the other ingredients and mix well.
  • Transfer the mixture into a baking dish evenly.
  • Dot the top with butter and sprinkle with cinnamon. Bake at 350°F for 60 minutes. Serve warm and enjoy!
