Keto Coconut Curry Chicken Recipe

– Chef's Knife – Large Skillet – Wooden Spoon – Measuring Cups – Can Opener

Equipments 

– 1 tablespoon olive oil – 450 g 1 lb chicken breast – 1 medium onion  – 1 medium pointed red pepper  – 2 large garlic cloves  – 1 tablespoon fresh ginger  – 1 medium-pointed red pepper owder

Ingredients 

1. Heat olive oil in a large pan, add chicken, season with salt and pepper, and cook for 5-7 minutes until slightly golden. 2.  Add onion, red pepper, garlic, and ginger, cooking for 3-4 minutes while stirring occasionally.

Instructions

3. Stir in curry powder and paprika, then add passata, chicken stock, and coconut cream. 4.  Bring to a simmer, then lower the heat and simmer for 15 minutes until the sauce thickens. 5. Garnish with freshly chopped coriander and serve over cauliflower rice.
