Keto Lemon Chicken Recipe

– Chef's Knife – Cutting Board – Medium-sized Mixing Bowl – Whisk – Skillet – Tongs

Equipment

– 2 large boneless skinless chicken breasts – Salt & pepper to taste – 1/4 teaspoon garlic powder – Flour for dredging – 1 tablespoon olive oil – 3 tablespoons butter divided

Ingredients 

1. Slice chicken breasts in half lengthwise and season with salt, pepper, and garlic powder. 2. Coat chicken in flour. 3.  Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. 4.  Cook chicken cutlets for 4-5 minutes per side until golden; set aside.

Instructions  

5. In the same skillet, add chicken broth, lemon juice + zest, and remaining butter; simmer for a few minutes. 6. Return chicken to the skillet and cook until done and sauce is reduced. 7. Season with salt & pepper, garnish with fresh parsley if desired, and serve.
