Ingredients

  • 1 medium size head of cauliflower
  • 1 tablespoon butter
  • 1 teaspoon minced garlic
  • 1 cup unsweetened almond milk regular milk is fine if not keto
  • 1/4 cup heavy cream
  • 3 ounces cream cheese
  • 2 cups shredded cheddar cheese divided

Instructions

  • Preheat oven to 400°F.
  • Remove stems from a head of cauliflower and place florets in a lightly greased 11×7 baking dish. Roast for 15 minutes.
  • In a small pan over medium heat, whisk together butter, garlic, milk, heavy cream, and cream cheese until smooth.
  • Stir in 1 cup of cheddar until melted and the mixture thickens slightly.
  • Pour cheese sauce over roasted cauliflower, top with remaining cheese, and bake for 20-25 minutes.
