Ingredients

  • 1 ½ cups cold water
  • ¾ cup uncooked white rice
  • 2 cups milk divided
  • â…“ cup white sugar
  • ¼ teaspoon salt
  • 1 large egg beaten

  • 1 tablespoon butter
  • ½ teaspoon vanilla extract

Instructions

  • Bring 1 ½ cups of cold water to a boil in a saucepan over medium heat.
  • Stir in ¾ cup of uncooked white rice. Reduce heat to low, cover, and simmer until rice is tender and water is absorbed, about 20 minutes.
  • In a clean saucepan, combine cooked rice, 1 ½ cups of milk, â…“ cup of sugar, and ¼ teaspoon of salt. Cook over medium heat, stirring often, until thick and creamy, about 15 minutes.
  • Stir in the remaining ½ cup of milk, beaten egg, and â…” cup of golden raisins. Cook for an additional 2 minutes, stirring constantly.
  • Remove from heat and stir in 1 tablespoon of butter and ½ teaspoon of vanilla extract until combined.
