Storage and Leftover Tips!
To keep your Oatmeal Coconut Cookies fresh and enjoyable:
- Storage: Allow the cookies to cool completely before storing them. Place them in an airtight container with parchment paper between layers to prevent sticking. Alternatively, use a resealable plastic bag.
- Room Temperature: If planning to consume within a few days, storing at room temperature is suitable. Keep the container in a cool, dry place, away from direct sunlight.
- Refrigeration: For longer storage, especially in warmer climates, you can refrigerate the cookies. Ensure they are in an airtight container to prevent moisture absorption.
- Freezing: To extend the shelf life, freeze the cookies. Wrap them individually or separate layers with parchment paper before placing them in a freezer-friendly container. Thaw at room temperature when ready to enjoy.
- Reviving Staleness: If the cookies lose their freshness, you can revive them by placing a slice of bread in the container. The cookies will absorb moisture from the bread, becoming soft again.
PRO TIP: Remember, the storage duration depends on the ingredients used and any added moisture. Properly stored, these cookies can maintain their quality for up to a week at room temperature, longer in the refrigerator, and even more extended periods when frozen.

What is the actual count of cookies? Your recipe say 12 servings, how many per serving. Make the 12 servings of one cookie per and they are the size of small pancakes.

Thanks, Austin for this very clear recipe that results in a yummy softer cookie. The 2 Tbs cookie scoop made mine smaller than I expected since they didn’t flatten out during baking, which was a good thing because they maintained a softer center. I added a tablespoon of cinnamon to the flour mix and a cup of chopped pecans to the oatmeal and Coconut mix folded in at the end. Glad I did because they came out delicious!
