Equipment

  • 1 Hand Mixer
  • 1 Stand Mixer
  • 1 Cake Pan 9″
  • Bowls, measuring cups and spoons
  • Knife
  • Apple peeler

Ingredients

  • 1 ½ Cups All Purpose Flour
  • 1 ½ teaspoons Baking Powder
  • 1 ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1 Tablespoon Dark Rum add an extra tablespoon if you want a strong rum flavor
  • ¾ Cup Butter room temperature
  • Cup Granulated Sugar
  • 3 Large Eggs Room temperature
  • 2 Medium Apples cored peeled and chopped in ½” cubes
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoon Granluated Sugar for sprinkling top of cake prior to baking
  • 1 Medium Red Apple sliced thinly – do not peel optional for layering on top of cake

Instructions

  • Preheat oven to 350°F and prepare a 9″ round cake pan with parchment paper or grease it.

  • Core, peel, and chop apples into ½” cubes, tossing them in lemon juice to prevent browning.

  • Whisk together flour, baking powder, salt, and cinnamon in a small bowl.

  • Cream butter and sugar in a stand mixer until light and fluffy, then add eggs one at a time, mixing well.

  • Mix in rum, then gradually add the flour mixture until just combined. Fold in the chopped apples.

  • Pour the batter into the prepared pan, smooth the top, and sprinkle with sugar.

  • Bake for 40-50 minutes, let cool, and optionally dust with confectioners’ sugar.
