I am preparing this recipe for today’s breakfast as I was seeking something heathy today and then I got my eyes on the pumpkin puree sticked in the refrigerator. I tried this recipe many a times but you know I love trying different toppings everytime I have this. I have decided to try it with Fruit Salad with Whipped Cream today.

Ingredients

  • 1,1/2 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1 cup canned pumpkin puree
  • 1,1/4 cup cups milk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Butter or oil for cooking

Instructions

  • Preheat griddle or skillet over medium-high heat.
  • Mix dry ingredients in a bowl: flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  • In another bowl, combine wet ingredients: pumpkin puree, milk, egg, melted butter, and vanilla extract.
  • Combine wet and dry ingredients until smooth.
  • Grease griddle/skillet and pour batter to make pancakes.
  • Cook until bubbles form, then flip and cook the other side until golden brown.
  • Keep cooked pancakes warm in the oven.
