Time for The Tips!
- Make sure your ingredients are at room temperature before mixing. Leave items like cream and eggs out ahead of time.
- Measure your flour correctly by spooning it into the measuring cup and then leveling it off. Alternatively, use a kitchen scale for accuracy.
- Use a cookie scoop to easily fill your cupcake liners with batter.
- Opt for rainbow jimmies sprinkles for the best results. They’ll keep their color and won’t bleed into the batter.
- If you don’t have frosting bags and tips, a simple trick is to use a freezer Ziplock bag. Just snip off a corner to create a 1-inch opening for piping.
Variations and Substitutions!
So, you’re all set to whip up a batch of Funfetti cupcakes, but you might be missing one or two key components. Not a problem! Here are a few helpful alternatives and swaps for you to consider:
- All-Purpose Flour: If all-purpose flour (AP) is unavailable, you can substitute a gluten-free flour blend.
- Granulated Sugar: If you want your cupcakes to turn out just the way you want them to, you should stick to the recommended amount and kind of granulated sugar.
- Salsa: Is there no cream? Of course! Buttermilk, full-fat yogurt, or even almond or soy milk might work as a substitute.
- Oil Without Flavor: Melted butter or other flavorless oil will do in place of vegetable oil.
- Egg: A flaxseed egg or a vegan egg substitute can be used in place of eggs if you like.
- Flavor Enhancer: Vanilla extract is a safe bet, but if you’re in the mood to experiment, try substituting lemon or coconut extract, or just leave it out completely.
- Almond Extract: It’s not required, but it adds a lovely flavor. If you prefer not to use it, simply add a touch more vanilla.
- Rainbow Jimmie Sprinkles: For the most beautiful results, use just rainbow jimmie sprinkles. Nonpareils wouldn’t work well in this situation!
Before we get to the buttercream:
- Unsalted Butter: Salted butter also works; just don’t add any more salt if using unsalted butter. You can also get vegan butter, which is fun!
- Heavy Cream: If you happen to run out of heavy cream, don’t worry. Substitute milk or whipping cream for the regular milk.

Questions...the narrative mentions almond extract and sour cream but neither are listed in the ingredients. And cupcake batter calls for 1-1/2 CUPS of vanilla which I am assuming is 1-1/2 tsp but should there be the addition of almond extract?

Hi Marla, thanks for pointing that out! The almond extract is listed in the ingredients, but there's no sour cream in this recipe. For the cupcake batter, you're correctโit should be 1-1/2 teaspoons of vanilla. There's no need to add extra almond extract. I've updated the post to clarify. Thanks again for your attention to detail!
