Hello, I’m Jacob Allen, an avid food enthusiast. Today, I’m happy to share my take on Birria Tacos, a beloved Mexican comfort dish. Reflecting on a recent trip, I discovered a quaint taco stand in a bustling market that served the most tantalizing Birria Tacos.
The experience was unforgettable—the rich, tender beef melded perfectly with spices, wrapped in warm corn tortillas. Inspired by that moment, I’ve embarked on recreating this authentic dish in my own kitchen, ensuring every ingredient and technique honors the vibrant flavors of Mexico.

Instant Pot OR Slow Cooker?
- Instant Pot – To make it in the Instant Pot, you would simply make the sauce as stated in the recipe. And sear the meat in the Instant Pot. Pour in the sauce atop the meat and set it to Stew Setting. It should be High Pressure for about 50 minutes.
- Slow Cooker – you would make the sauce as stated in the recipe. Sear the meat (if your slow cooker has this option – most do). And then pour in the sauce and broth. Set it to “high” and cook for 6 to 7 hours.

Instructions

- Shred the Beef: Once cooked, remove the beef from the pot and shred using two forks. Return shredded beef to the pot and simmer for another 15-20 minutes to absorb flavors.
- Prepare Tacos: Heat a skillet over medium heat. Warm corn tortillas until lightly charred on each side. Fill each tortilla with birria beef. Top with cilantro, diced onions, and a squeeze of lime juice.
Notes
- Adjust the spiciness by varying the amount of chipotle peppers used.
- For deeper flavor, prepare the birria a day ahead and let it sit in the fridge overnight before reheating and serving.

Time For My Personal Tips!
Tip 1: Use quality beef cuts like brisket or chuck roast for the best texture.
Tip 2: Don’t skip the step of searing the meat—it enhances the flavor of the birria.
Tip 3: Use corn tortillas and char them slightly for an authentic taste and texture.
Tip 4: Serve with a side of consommé (the cooking broth) for dipping for an extra indulgent experience.
Tip 5: Customize toppings with radishes, avocado slices, or your favorite salsa for added freshness and flavor.
Variations:
- Birria Tacos Dorados: Dip assembled tacos in consommé and pan-fry until crispy.
- Birria Quesatacos: Use birria beef as a filling for quesadillas.
- Birria Ramen: Serve birria beef over ramen noodles with a soft-boiled egg and green onions.
