I’ll be honest, this recipe came about during one of those weekend mornings when I was seriously craving pizza but also wanted something breakfast-y. Instead of having to pick one or the other, I decided to combine the two into one epic mashup.

After some trial and error (and maybe one kitchen mishap or two), I ended up with this golden beauty. We’re talking about a crispy pizza crust loaded up with scrambled eggs, gooey cheese, crispy bacon or sausage, and any other breakfast goodies your heart desires. It’s the best of both worlds – the savory flavors of pizza combined with classic morning grub.

Ingredients

  • 13.8 ounce tube refrigerated pizza crust
  • 2 Tablespoons olive oil
  • 8 large eggs
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • â…“ cup milk
  • 2 Tablespoons salted butter
  • 15 ounce can Libbys Country Sausage Gravy
  • 2 cups shredded Colby jack cheese
  • ½ cup real bacon pieces

Instructions

  • Preheat oven to 425°F. Spray a large baking sheet with nonstick cooking spray.
  • Spread the pizza crust into the pan, stretching it to the edges. Brush with olive oil and poke with a fork.
  • In a bowl, whisk together eggs, salt, pepper, and milk.
  • In a skillet, melt butter and scramble the egg mixture until fluffy.
  • Spread the sausage gravy over the pizza crust.
  • Layer scrambled eggs, shredded Colby jack cheese, and bacon pieces on top.
  • Roll up the crust and place it seam-side down on the baking sheet.
  • Bake in preheated oven for 20 minutes or until golden brown.
