Coronation Chicken Recipe

- Large pot for poaching chicken
- Knife for slicing mango
- Large and medium mixing bowls

Ingredients
- 6 skinless boneless chicken breast halves
- â…“ cup sultana raisins
- 1 1 pound large mango, peeled, thinly sliced
- â…” cup mayonnaise
- 1 teaspoon mild curry powder
- 1 tablespoon mango chutney
- 1 teaspoon fresh lemon juice
- 1 pinch salt and ground black pepper
- ¾ cup toasted cashews Optional
Instructions
- Poach chicken in boiling water for 20 minutes until cooked through. Drain, cool, and slice into strips.
- In a large bowl, combine chicken strips, raisins, and half of the sliced mango.
- In a medium bowl, mix mayonnaise, curry powder, mango chutney, lemon juice, salt, and pepper.
- Gently toss the chicken mixture with the dressing until well coated. Add half of the toasted cashews.
- Transfer the chicken salad to a serving platter and garnish with remaining mango slices and cashews.
