Ingredients

  • 2 teaspoons pure vanilla extract
  • 3 very ripe bananas
  • 1/2 cup unsalted butter melted
  • 1/2 cup buttermilk
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup walnuts or pecans chopped (optional)

Glaze

  • 1 teaspoon pure vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons walnuts or pecans finely chopped (optional)
  • 3 tablespoons milk

Instructions

  • Preheat oven to 350º F (180º C) and grease a loaf pan.
  • Mash ripe bananas in a bowl until smooth. Stir in melted butter, then add buttermilk, vanilla, and sugar.
  • Mix in flour, baking powder, baking soda, and salt. Fold in walnuts if using.
  • Pour batter into the pan and bake for 1 hour, or until a wooden pick comes out clean.
  • Let the bread cool completely in the pan on a wire rack.
  • Mix powdered sugar, milk, vanilla, and chopped nuts for the glaze. Drizzle over the cooled bread and serve.
