  • Cookie sheet or tray
  • Large skillet (cast iron recommended)
  • Paper Towels

Ingredients

  • 4 pound chicken, cut into pieces
  • 2 cups  all-purpose flour for coating
  • salt and pepper to taste
  • 1 cup buttermilk
  • 1 tsp  paprika
  • 2 quarts vegetable oil for frying

Instructions

  • Skin and prepare chicken pieces.
  • Season flour in a plastic bag with paprika, salt, and pepper.
  • Dip chicken in buttermilk, then coat in seasoned flour.
  • Allow chicken to sit until flour forms a paste-like consistency.
  • Heat vegetable oil in skillet until very hot.
  • Brown chicken on both sides in hot oil.
  • Cover skillet and cook chicken for 30 minutes.
  • Remove cover, raise heat, and continue frying until crispy.
  • Drain fried chicken on paper towels.
  • Keep finished chicken warm in oven while frying remaining batches.
