Ingredients

  • 1 pound lean ground beef
  • 1 large clove garlic minced
  • 1 medium onion chopped
  • 1 tablespoon canola oil
  • 2 tablespoons chopped fresh parsley
  • 1 8 ounce can no-salt-added tomato sauce, divided
  • 1 teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 ½ cups cooked brown rice
  • 4 large orange bell peppers

Instructions

  • Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • Cut the tops off the bell peppers and remove seeds and membranes. Carve jack-o’-lantern faces into each pepper.
