I first tried cauliflower as a substitute for macaroni a few years back when I went keto to slim down before my daughter’s wedding. I was skeptical at first, but this dish quickly became a staple in our house.

Keto Cauliflower Mac Cheese Recipe

Ingredients
- 1 head cauliflower approximately 4 cups chopped
- 1 cup plain yogurt full fat
- 4 tablespoons cream cheese
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt to taste
- 1/2 teaspoon pepper to taste
- 1 tablespoon Dijon mustard
- 1 cup mozzarella cheese shredded
- 1 cup sharp cheddar cheese shredded
Instructions
- Preheat oven to 180C/350F.
- Grease a 9 x 13-inch baking dish.
- Microwave or boil chopped cauliflower until tender.
- Heat yogurt and cream cheese until bubbling, whisk in spices and shredded cheese.
- Pour cheese sauce over cauliflower, sprinkle with more cheese, bake until bubbly.
