Ingredients
- 2 cans Albacore Tuna 5.5 oz each
- 5 baby carrots chopped
- 1/4 cup petite peas frozen
- 1 lg stalk celery chopped
- 2 tbsp chopped onion chopped finely
- 1 tsp Lemon pepper seasoning
- 1 cup shredded Colbyjack cheese or shredded cheddar
- 1 lg egg
- 1/4 cup mayonnaise
- 1/4 cup sour cream
Instructions
- Preheat oven to 350°F.
- Grease a 9″ x 9″ or 9″ x 11″ oven-proof pan or small casserole bowl with avocado oil.
- Chop onion, celery, and carrots.
- In a medium bowl, mix tuna, mayonnaise, sour cream, egg, lemon pepper seasoning, chopped vegetables, peas, and half of the cheese.
- Pour mixture into prepared pan and sprinkle remaining cheese on top.
- Bake for 30 minutes or until cheese is melted and casserole is hot and bubbly.
- Cut into 4 servings and serve warm.
