Ingredients

  • 1 medium loaf bakery baguette sliced
  • 2 cups diced ripe tomato
  • 2 cloves garlic minced
  • ¼ cup finely diced white onion
  • 2 TBSP extra virgin olive oil
  • 2 TBSP white balsamic vinegar
  • 5 large basil leaves chopped/sliced, plus extra for topping
  • 1 tsp of fresh chopped parsley
  • ¼ tsp salt
  • tsp garlic powder
  • 2-3 TBSP crumbled feta
  • 1-2 TBSP sweet balsamic glaze

Instructions

  • Preheat the oven or toaster oven to 350 degrees F.
  • In a small bowl, combine the chopped tomatoes, onion, and garlic.
  • Whisk together the olive oil, white balsamic vinegar, basil, parsley, salt, and garlic powder, then pour this mixture over the veggies.
  • Brush the sliced baguette with olive oil and toast in the oven until golden brown, about 5-10 minutes.
  • Spoon the bruschetta mixture over the toasted bread slices.
  • Sprinkle with extra basil, feta, and a generous drizzle of balsamic glaze before serving.
