Ingredients
- 1 medium loaf bakery baguette sliced
- 2 cups diced ripe tomato
- 2 cloves garlic minced
- ¼ cup finely diced white onion
- 2 TBSP extra virgin olive oil
- 2 TBSP white balsamic vinegar
- 5 large basil leaves chopped/sliced, plus extra for topping
- 1 tsp of fresh chopped parsley
- ¼ tsp salt
- ⅛ tsp garlic powder
- 2-3 TBSP crumbled feta
- 1-2 TBSP sweet balsamic glaze
Instructions
- Preheat the oven or toaster oven to 350 degrees F.
- In a small bowl, combine the chopped tomatoes, onion, and garlic.
- Whisk together the olive oil, white balsamic vinegar, basil, parsley, salt, and garlic powder, then pour this mixture over the veggies.
- Brush the sliced baguette with olive oil and toast in the oven until golden brown, about 5-10 minutes.
- Spoon the bruschetta mixture over the toasted bread slices.
- Sprinkle with extra basil, feta, and a generous drizzle of balsamic glaze before serving.
