During my college years, my friends and I were always on the lookout for new recipes to break free from the monotony of cafeteria food. One day, while browsing through old cookbooks at a thrift store, we stumbled upon a recipe for paella. Although, I have tried several rice recipes, intrigued by its Spanish origins and colorful ingredients, we knew we had to try it out.

Gathering in our cramped kitchen, we divided tasks and poured our hearts into creating this unfamiliar dish. The aroma of saffron-infused rice and the vibrant mix of seafood and vegetables filled the air as we cooked away. Pairing it with a refreshing glass of Sangria was the perfect finishing touch.

Equipment

Ingredients

  • 2 tbps olive oil
  • 1 onion
  • 3 cloves garlic
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 tomato
  • 1 cup paella rice
  • 2 cups chicken or vegetable broth
  • 1 pinch saffron threads
  • 1 tsp smoked paprika
  • Salt and pepper
  • 1 cup cooked chicken
  • 1 cup cooked seafood
  • 1/2 cup green peas
  • Lemon wedges

Instructions

  • Heat olive oil in a large skillet or paella pan over medium heat. Add onion, garlic, and bell peppers. Cook until softened, about 5 minutes.
  • Stir in diced tomato and cook for another 2 minutes.
  • Add rice to the pan and stir to coat with the vegetable mixture.
  • In a separate pot, heat the broth with saffron threads until warmed through. Stir in smoked paprika, salt, and pepper.
  • Pour the broth mixture over the rice in the pan. Bring to a simmer and cook, without stirring, for about 15-20 minutes, or until the rice is almost tender and most of the liquid has been absorbed.
  • Arrange cooked chicken, seafood, and green peas on top of the rice. Cover and cook for an additional 5-10 minutes, or until the rice is fully cooked and the seafood is heated through.
  • Remove from heat and let rest for a few minutes before serving. Serve with lemon wedges on the side for squeezing over the paella. Enjoy!

Notes

For best results, use a traditional paella pan if available, as it helps to achieve the characteristic socarrat (crispy bottom layer of rice).
Feel free to customize the protein and vegetables based on your preferences or what you have on hand. Traditional variations include rabbit, snails, and beans, but chicken and seafood are more commonly used outside of Spain.
