I’ve been tinkering with this recipe for a while now, trying to get it just right. After plenty of trial and error (and more than a few oddly shaped pretzels), I think I’ve nailed it.

This homemade version brings that mall-food-court favorite right into your kitchen. It’s simpler than you might think, and the results are so worth it.

Tips For The Best Homemade Soft Pretzels

  1. Divide the Dough Easily: To get 12 equal pieces, start by cutting the dough in half. Then, cut each half in half again. Finally, divide those sections into thirds. This method is quick and ensures even pieces.
  2. Perfect Surface for Rolling: Work on a non-floured or very lightly floured surface. I initially used a lightly floured surface, but I found it much harder to stretch the dough. It’s actually quicker and easier to roll them out on a surface with little to no flour.

Ingredients
  

  • 2 cups milk
  • 1 1/2 tablespoons active dry yeast 2 packets
  • 6 tablespoons brown sugar
  • 4 tablespoons butter melted
  • 5 to 5 1/2 cups flour
  • 2 teaspoons salt
  • 1/3 cup baking soda
  • 3 cups warm water
  • Coarse salt
  • 8 tablespoons butter melted

Instructions
 

  • Warm milk in microwave (1.5 mins, 110ºF). Stir in yeast and 1 tbsp brown sugar; rest 10 mins.
  • Combine with melted butter, remaining brown sugar in bowl or mixer.
  • Gradually add flour and salt, knead 10 mins until smooth.
  • Place in greased bowl, cover with cling wrap, rise 1 hour.
  • Preheat oven to 450ºF. Punch down dough, divide into 12-14 pieces, roll into ropes.
  • Mix warm water and baking soda in bowl. Dip dough pieces, place on greased sheet, sprinkle with salt.
  • Bake 6-10 mins until browned. Melt remaining butter, dip hot pretzel bites.
