Ingredients

  • 1.5 pound colossal shrimp cleaned shells removed, and deveined – size U12-15
  • salt and pepper to taste
  • 1 large lemon cut into wedges
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup dry white wine
  • 3/4 cup low sodium chicken stock
  • 6 tablespoons unsalted butter cubed
  • For the seasoned breadcrumbs
  • 1/3 cup breadcrumbs
  • 2 tablespoons grated Parmigiano Reggiano
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon crushed red pepper
  • 6 cloves garlic minced
  • 2 tablespoons minced flat-leaf Italian parsley
  • 2 teaspoons dried oregano
  • 1/2 teaspoon kosher salt

Instructions

  • Sauté garlic in olive oil for 2 minutes.
  • Add remaining breadcrumb ingredients, mix, and set aside.
  • Shrimp
  • Preheat oven to 425°F, with racks in the middle and top positions.
  • Pat shrimp dry, season with salt and pepper, and arrange in a baking dish.
  • Top shrimp with breadcrumbs, pour wine and stock around, add cubed butter, and drizzle with olive oil.
  • Bake for 10 minutes until shrimp are cooked.
  • Broil on the top rack for 1-2 minutes until browned.
