Ingredients
Smash Burger Patties:

- 4 slices medium cheddar cheese, we love thick-sliced
- garlic powder, added to taste
Burger Sauce:
- 1/3 Cup mayonnaise
- 1 tsp yellow mustard
Toppings:
- 2 Cups iceberg lettuce, shredded
- 1/2 red onion, sliced into thin rings
- 2 Dill Pickles, cut into 12 slices
Instructions
- Divide the ground beef into 8 portions, approximately 3 oz each. Gently roll each portion into a loose ball shape.
- Cover the burger balls and refrigerate while you get the other ingredients ready. Remember, the meat should be cold when it hits the grill.
- Remove wilted leaves from the lettuce to keep it crunchy. Finely shred the lettuce. Slice tomatoes, onions, and pickles.
- Butter the buns and toast them over medium heat until they are golden on the buttered side. Increase the griddle to medium/high heat. Place 2-4 burger balls onto the hot griddle.
- Quickly place parchment paper over the meat and smash it down firmly into a thin patty. Peel back and discard the parchment paper. Season the patties with salt, pepper, and garlic powder.
- Add 1/2 teaspoon of burger sauce on each patty. Cook the patties for 2 minutes on the first side or until seared and juices start to come to the surface.
- Use a spatula facing down at a 45˚ angle to scrape under the burger and flip. Cook for an additional 1 minute. Top half of the patties with sliced cheese and cover with the second patty.
- Repeat the process with the remaining burgers. Transfer the finished burgers to a platter as they finish cooking.
