– 12 cup bundt pan – kitchenaid mixer
– 1 ½ cups unsalted butter room temperature – 3 cups granulated sugar – ½ teaspoon salt – 5 large eggs room temperature – 3 cups sifted cake flour – 1/2 cup 7-Up soda – 2 teaspoons pure lemon extract
1. Preheat your oven to 315°F. 2. Spray a bundt pan with non-stick baking spray. 3. In a mixer bowl, beat butter for 2 minutes on high speed. 4. Slowly add sugar and salt, continue beating for 7 more minutes until pale yellow and fluffy.
5. Add eggs one at a time, mixing well after each addition. 6. Turn mixer to low speed and gradually add flour in two parts. 7. Pour in 7 Up and lemon extract, mix until just combined. 8. Pour batter into prepared bundt pan.
9. Bake for 1 hour and 15 – 20 minutes, until a toothpick comes out clean. 1o. Cool in pan on a wire rack for 10 minutes, then invert onto a serving plate.
