– Mixing Bowl – Measuring Cups – Rolling Pin – Knife – Saucepan – Baking sheet – Pastry Brush
– 1 box store bought pie dough containing 2 sheets *see notes for GF option – 2 tbsp unsalted butter reg or plant-based – 2 1/2 cups finely chopped fuji or honeycrisp apples about 2 large apples – 1/4 cup 50g light brown sugar, packed – 1 tsp ground cinnamon – Juice of 1/2 lemon
– Bring pie dough to room temperature. – Melt butter in saucepan over medium heat. – Cook apples, brown sugar, cinnamon, and lemon juice until tender. – Mix cornstarch and water, add to thicken filling, then cool.
– Preheat oven to 400°F and line baking sheet with parchment. – Roll out pie dough, cut into apple shapes. – Place half on baking sheet, spoon filling onto each. – Brush edges with egg wash, top with vented apple shapes.
– Seal edges, crimp with fork, brush tops with egg wash. – Mix cinnamon and sugar, sprinkle over pies. – Bake 12-14 minutes until golden. – Cool on sheet 5 minutes, then transfer to rack.
