1. In a large bowl, mix 1 cup cottage cheese, ⅓ cup all-purpose flour, 3 lightly beaten eggs, and 2 tablespoons vegetable oil until smooth. 2. Spray a large skillet with cooking spray and heat over medium heat
3. Pour ⅓ cup of batter onto the heated skillet for each pancake. 4. Cook until bubbles appear on the surface, about 3 to 5 minutes. 5. Flip the pancakes and cook until browned on the other side, about 3 to 4 minutes.
