– 2 cups mixed dried fruits – 1 cup chopped nuts – 1 cup unsalted butter softened – 1 cup brown sugar packed – 4 large eggs – 2 cups all-purpose flour – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1 teaspoon ground cinnamon – 1/2 teaspoon ground nutmeg – 1/2 cup brandy or rum
1. Preheat your oven to 325°F (160°C). Grease and line a 9-inch (23 cm) round cake pan with parchment paper. 2. In a bowl, combine the mixed dried fruits and chopped nuts. Soak them in brandy or rum overnight if desired. 3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. 5. Gradually add the dry ingredients to the butter and sugar mixture, mixing until just combined. Fold in the soaked fruits and nuts. 6. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 1.5 to 2 hours or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely. 8. If desired, brush the cooled cake with additional brandy or rum for extra moisture and flavor. 9. Once completely cooled, slice and serve your delicious fruit cake!
