– Large Pot – Colander – Mixing Bowl – Knife – Measuring Cups – Mixing Spoon
– 2 -2 ½ pounds potatoes preferably Yukon gold potatoes or red potatoes – 1 teaspoon brown sugar – 1 ½ teaspoon Kosher salt – ½ cup scallions or green onion chopped – 1 cup Hellmann’s Mayonnaise – freshly ground black pepper to taste
– Wash, peel, and cube the potatoes. – Boil potatoes in salted water until tender, then drain and cool.
– Mix vinegar, brown sugar, and salt in a large bowl. – Whisk in Hellmann’s Mayonnaise.
– Add pepper, scallions, and cooled potatoes; mix well. – Chill in the refrigerator and sprinkle with paprika before serving.
