Keto Cauliflower Casserole Recipe

– Cutting Board – Knife – Large Pot – Colander – Mixing Bowl – Spatula – Baking Dish

Equipments 

– 1 medium size head of cauliflower – 1 tablespoon butter – 1 teaspoon minced garlic – 1 cup unsweetened almond milk regular milk is fine if not keto – 1/4 cup heavy cream – 3 ounces cream cheese – 2 cups shredded cheddar cheese divided

Ingredients 

1. Preheat oven to 400°F. 2. Remove stems from a head of cauliflower and place florets in a lightly greased 11x7 baking dish. Roast for 15 minutes. 3. In a small pan over medium heat, whisk together butter, garlic, milk, heavy cream, and cream cheese until smooth.

4. Stir in 1 cup of cheddar until melted and the mixture thickens slightly. 5.  Pour cheese sauce over roasted cauliflower, top with remaining cheese, and bake for 20-25 minutes.
