– 1 medium loaf bakery baguette sliced – 2 cups diced ripe tomato – 2 cloves garlic minced – ¼ cup finely diced white onion – 2 TBSP extra virgin olive oil – 2 TBSP white balsamic vinegar – 5 large basil leaves chopped/sliced, plus extra for topping – 1 tsp of fresh chopped parsley
1. Preheat the oven or toaster oven to 350 degrees F. 2. In a small bowl, combine the chopped tomatoes, onion, and garlic. 3. Whisk together the olive oil, white balsamic vinegar, basil, parsley, salt, and garlic powder, then pour this mixture over the veggies.
4. Brush the sliced baguette with olive oil and toast in the oven until golden brown, about 5-10 minutes. 5. Spoon the bruschetta mixture over the toasted bread slices. 6. Sprinkle with extra basil, feta, and a generous drizzle of balsamic glaze before serving.
