– Vegetable Chopper – Sharp Knife – Medium-sized Skillet – Measuring Spoon
– 2 tbsp canola oil – 1/3 tsp baking soda – 2 to 3 large onions, finely sliced – 1/2 tsp salt
1. Melt a tablespoon of butter in a large, heavy-bottomed stainless steel or enameled cast iron saucepan. Crank up the heat – we're going for high here! 2. Add 2 to 3 large, finely sliced onions to the sizzling pan. Keep that wooden spoon handy and give it a good stir. Cook and stir until the bottom of the saucepan glows with a pale brown fond, usually about 5 minutes of sautéing. –
3. Time to introduce some water magic! Pour in 2 tablespoons of water and use your trusty wooden spoon to scrape up that flavorful fond from the bottom of the pan. It's like unlocking hidden flavor treasures. 4. Keep the onion party going! Stir frequently as the fond builds up again, which takes about 2 minutes. Add another 2 tablespoons of water, scrape, and let the caramelization dance continue. –
5. Repeat the cooking, adding water, and scraping routine until your onions transform into a deep, dark brown masterpiece. This usually takes around 15 minutes in total. It's the slow-cooked flavor without the wait! 6. Season your caramelized onions with a pinch of kosher salt. This step is your personal touch – adjust to your taste preferences.
