–Mixing Bowl – Whisk – Non-Stick Pan – Spatula – Measuring Cups
– 2 cups leftover cooked rice – 2 eggs – 1/4 cup finely diced green onions – 1/4 cup grated cheese cheddar, mozzarella, and gouda work well – 1/4 teaspoon salt – 1/8 teaspoon of pepper
– Mix cooked rice and cracked eggs in a bowl. – Add salt and pepper to the mixture and stir. – Mix in chopped green onions and grated cheese.
– Heat a nonstick skillet on medium heat. – Spoon rice mixture onto the skillet, shaping into pancakes. – Cook each side until golden brown and crispy, then flip. Repeat until all the mixture is used up.
