– 2 cups ricotta cheese – 2 tablespoons extra virgin olive oil plus extra for drizzling – 2 cloves garlic minced – 1 tablespoon fresh lemon juice – 1 tablespoon fresh basil finely chopped – 1 tablespoon fresh parsley finely chopped – Salt and pepper to taste
1. In a mixing bowl, combine the ricotta cheese, olive oil, minced garlic, and fresh lemon juice. 2. Using a hand mixer or a food processor, whip the mixture until smooth and airy. This usually takes 2-3 minutes. 3. Add the finely chopped fresh basil and parsley to the whipped ricotta. Season with salt and pepper according to your taste.
4. Continue to whip the mixture briefly until the herbs are well incorporated. 5. Transfer the whipped ricotta dip to a serving bowl. 6. Drizzle a bit of extra virgin olive oil over the top for added richness and flavor.
