Ingredients

  • 2 cups mixed dried fruits (raisins, currants, chopped dates, candied peel)
  • 1 cup chopped nuts (walnuts, almonds, or your choice)
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup brandy or rum (for soaking and brushing, optional)

Instructions

  • Preheat your oven to 325°F (160°C). Grease and line a 9-inch (23 cm) round cake pan with parchment paper.
  • In a bowl, combine the mixed dried fruits and chopped nuts. Soak them in brandy or rum overnight if desired.
  • In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the butter and sugar mixture, mixing until just combined. Fold in the soaked fruits and nuts.
  • Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 1.5 to 2 hours or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.
  • If desired, brush the cooled cake with additional brandy or rum for extra moisture and flavor.
