Wash and dry the apples, celery, and green onions.
Cut each apple in half, then slice thinly. Slice the celery and green onions thinly as well.
Roughly chop the peanuts.
In a large bowl, combine the apples, celery, green onions, shallot, peanuts, lemon juice, olive oil, salt, and pepper.
Toss everything until evenly mixed.
Taste and add more salt or pepper if needed.
Plate and garnish with extra peanuts. Enjoy!
