Ingredients

Chocolate Cake

  • 2/3 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon espresso powder
  • 4 large eggs
  • 3/4 cup sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup vegetable oil or melted coconut oil
  • 1/4 cup milk

Cream Filling

  • 1 cup heavy cream
  • 1/4 cup confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350ºF and prepare baking sheet.
  • Mix dry ingredients in a bowl.
  • Beat eggs, sugar, vanilla, oil, and milk together.
  • Combine wet and dry ingredients.
  • Spread batter on baking sheet and bake for 10-12 minutes.
  • Cool cake briefly, then roll and cool completely.
  • Make cream filling by whipping heavy cream, sugar, and vanilla.
  • Unroll cake, spread with filling, roll up, and frost with ganache. Refrigerate before serving.
