Ingredients

  • 3 cups mixed olives
  • ½ fresh chili sliced
  • 10 thyme sprigs use the leaves
  • 1 teaspoon dried oregano
  • ¼ teaspoon dried chili flakes optional
  • 3-4 Tablespoons extra virgin olive oil
  • 2-3 garlic cloves peeled and sliced
  • 1 Tablespoon white wine vinegar
  • salt to taste

Instructions

  • Cut the chili in half, deseed, and slice one half (use less for milder heat).
  • Slice or smash the garlic cloves.
  • Place the olives in a large serving bowl.
  • Add the sliced chili and garlic to the olives.
  • Add the remaining ingredients to the bowl.
  • Toss everything together until well combined.
  • Taste and add fine salt if needed, depending on the olives.
  • Transfer to a glass jar or container and let rest for 30 minutes before serving. Serve at room temperature.
