curry powder

Instructions
Season the pork pieces with salt, pepper, and half of the curry powder.
In a pan over medium heat, heat the cooking oil. Brown the pork pieces on all sides. Once browned, set aside.
In the same pan, add a bit more oil if needed. Sauté the chopped onions until golden brown.
Add minced garlic and grated ginger. Sauté for another minute until fragrant.
Add the remaining curry powder, ground cumin, ground coriander, and turmeric to the pan. Stir well.
Toss in the chopped tomatoes and cook until they break down, forming a thick sauce.
Place the browned pork pieces into a slow cooker. Pour the tomato-based sauce over the pork.
Cook on low for 4-6 hours or until the pork is tender and flavorful.
Garnish with fresh cilantro if desired.
Serve the pork curry over rice or with your favorite side.
