Ingredients

  • 2 cup Gluten-Free Flour
  • 12 tbps Baking Powder
  • 3 Eggs
  • Salt
  • Sugar
  • Vegetable Oil
  • 12 tbps Vanilla Extract

Instructions

  • Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together 1 1/2 cups of gluten-free all-purpose flour, 2 teaspoons of baking powder, 1/2 teaspoon of salt, and 2 tablespoons of granulated sugar until well combined.
  • Separate Eggs: Separate 2 large eggs, placing the yolks in a small bowl and the whites in a separate mixing bowl.
  • Mix Wet Ingredients: To the bowl with the egg yolks, add 1 3/4 cups of milk (or dairy-free alternative), 1/3 cup of vegetable oil or melted butter, and 1 teaspoon of vanilla extract. Whisk until well combined.
  • Combine Wet and Dry Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. It's okay if there are a few lumps in the batter.
  • Whip Egg Whites: Using a hand mixer or stand mixer, beat the egg whites until stiff peaks form.
  • Fold in Egg Whites: Gently fold the beaten egg whites into the batter until just incorporated. Be careful not to Overmix.
  • Cook Waffles: Lightly grease the preheated waffle iron with cooking spray or brush with melted butter. Pour enough batter onto the waffle iron to cover the grids, spreading it evenly. Close the lid and cook according to the manufacturer's instructions until the waffles are golden brown and crisp.
  • Serve: Serve the waffles immediately with your favorite toppings such as maple syrup, fresh fruit, whipped cream, or yogurt.
