Instructions
Combine honey and water in a small saucepan and simmer for 2 minutes until fully combined. Let it cool for 5 minutes.
Store leftover honey syrup in the refrigerator for up to 1 month.
Fill a cocktail shaker with ice.
Add bourbon, freshly squeezed lemon juice, and 1/2 ounce of honey syrup to the shaker.
Shake vigorously for 15 seconds until very cold.
Strain the cocktail into an ice-filled rocks glass.
Garnish with a lemon twist if desired.
