Ingredients

  • 1 pound extra lean ground beef
  • 1/2 medium onion chopped
  • 2 heaping tablespoons tomato paste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1 cup uncooked elbow macaroni
  • 3 cups beef broth
  • 2 cups freshly grated cheddar cheese
  • Salt & pepper to taste

Instructions

  • Cook ground beef and onions in a soup pot over medium-high heat until browned (7-10 minutes). Drain excess fat.
  • Stir in tomato paste, garlic powder, and chili powder.
  • Add beef broth and bring to a boil. Add macaroni.
  • Reduce heat to a rapid simmer. Cook uncovered, stirring occasionally, until pasta is tender and most liquid is absorbed (13-15 minutes).
  • Grate cheese while pasta cooks.
  • Remove pot from heat and stir in grated cheese. Season with salt and pepper.
  • Let sit for a couple of minutes before serving to enhance flavors.
  • Serve immediately and enjoy.
