Heat a skillet and coat it with cooking spray or oil.
Mix 1 cup of Kodiak Cakes mix with 1 cup of water to make the batter.
Cook 3-4 inch pancakes on the skillet until golden brown on both sides.
Form 6 sausage patties and cook them until browned and cooked through.
Optional: Melt cheese slices over the sausage patties as they finish cooking.
Beat the eggs and cook them as either scrambled eggs or a patty on the skillet.
Assemble the sandwiches with pancakes, sausage, eggs, and optional cheese.
Drizzle with maple syrup if desired, and enjoy!
