Ingredients

  • 1 4 to 5 pounds Bone-in prime rib roast
  • 4 Cloves garlic minced
  • 2 Tbsps fresh rosemary chopped
  • 2 Tbsps fresh thyme chopped
  • 2 Tbsps olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  • Preheat your oven to 450°F (230°C).
  • In a small bowl, mix together garlic, rosemary, thyme, olive oil, salt, and pepper to form a paste.
  • Rub the herb mixture all over the prime rib, ensuring it's evenly coated.
  • Place the roast bone-side down on a rack in a roasting pan.
  • Roast for 15 minutes at 450°F (230°C) to sear the meat.
  • Reduce the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches your desired doneness (about 20 minutes per pound for medium-rare).
  • Remove from the oven and let it rest, tented with foil, for at least 15 minutes before carving.

Notes

  1. Letting the roast rest after cooking allows the juices to redistribute, ensuring a moist and flavorful cut.
  2. Use a meat thermometer to accurately gauge the internal temperature for desired doneness
