Ingredients

  • 2 cups leftover cooked rice
  • 2 eggs
  • 1/4 cup finely diced green onions
  • 1/4 cup grated cheese cheddar, mozzarella, and gouda work well
  • 1/4 teaspoon salt
  • 1/8 teaspoon of pepper

Instructions

  • Mix cooked rice and cracked eggs in a bowl.
  • Add salt and pepper to the mixture and stir.
  • Mix in chopped green onions and grated cheese.
  • Heat a nonstick skillet on medium heat.
  • Spoon rice mixture onto the skillet, shaping into pancakes.
  • Cook each side until golden brown and crispy, then flip. Repeat until all the mixture is used up.
