Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 pound scallops
  • 1 pound white fish fillets (like cod or tilapia) cut into chunks
  • 1 can tomatoes diced
  • 4 cloves garlic minced
  • 1 onion finely chopped
  • 1 bell pepper diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, and bell pepper. Sauté for about 3-4 minutes until softened.
  • Add the diced tomatoes (with their juices) to the skillet. Stir and let it simmer for another 5 minutes to create a flavorful base.
  • Layer the seafood into the skillet. Start with the fish chunks, then add the shrimp and scallops on top. Season with salt and pepper.
  • Cover the skillet and let the seafood cook for about 6-8 minutes. Check periodically—once the shrimp turns pink and the fish flakes easily with a fork, it's ready.
  • Once cooked, sprinkle chopped parsley over the top for freshness.
  • Serve the seafood medley straight from the skillet or transfer it to a serving dish. Squeeze some lemon wedges over the seafood before enjoying.
