Ingredients

  • sticks browned butter chilled this will yield the right amount of browned butter.
  • ½ cup granulated sugar
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • ¾ cup brown sugar
  • 1 cup oatmeal I used old fashioned oats.
  • 1 tsp baking soda
  • ½ tsp baking powder
  • tsp chai spice
  • ¼ cup honey
  • 2⅔ cup flour
  • 1 tsp salt
  • 1 cup roasted walnuts chopped.
  • 4 oz pear preserves

Browned Butter Chai Glaze

  • 6 tbsp butter
  • 1 tsp chai spice
  • 1 tsp honey
  • sprinkly salt
  • cups powdered sugar
  • ½ tsp tspn vanilla extract
  • 3 tbsp hot water

Instructions

  • Brown Butter: Brown butter in a saucepan, then chill it in the fridge until solid.
  • Preheat Oven: Set your oven to 375°F and line a baking sheet with parchment paper.
  • Cream Butter and Sugars: In a mixer, beat solid brown butter with sugars on high for 3-5 minutes, until pale and creamy.
  • Add Eggs and Honey: Add eggs one at a time, mixing well after each, then mix in honey on medium speed.
  • Combine Dry Ingredients: Sift flour, baking powder, baking soda, salt, and chai spices into the wet mixture; mix just until combined.
  • Fold in Add-ins: Add oatmeal and chopped walnuts, mixing on low until just combined.
  • Fill with Pear Preserves: Scoop 4 oz. dough balls, make a well, add a teaspoon of pear preserves, pinch to seal, and place on the baking sheet.
  • Bake and Cool: Bake for 12-14 minutes until golden brown, then cool for 20 minutes.

Glaze

  • Brown Butter for Glaze: Brown butter in a pan, then stir in vanilla, honey, chai spice, salt, and powdered sugar until smooth.
  • Dip Cookies: Dip each cookie top in glaze and set on a wire rack to harden. Enjoy!
