– 1 cup chopped pecans divided – 2 cups sugar – 1 cup vegetable oil – ¼ cup honey – 3 large eggs – 3 cups all-purpose flour – 1 teaspoon baking soda – 1 teaspoon salt – 1 teaspoon ground cinnamon
1. Preheat oven to 350°F. Grease a 12-cup bundt pan and sprinkle with ¼ cup chopped pecans. 2. In a medium bowl, mix sugar, oil, and honey until combined. 3. Add eggs one at a time, mixing well after each addition.
4. Fold in vanilla, remaining chopped pecans, and chopped apples. 5. Spoon batter into prepared pan and bake for 65-75 minutes at 350°F. If browning too quickly, cover loosely with foil. 6. Let cool for 20-30 minutes, then invert onto a wire rack. Pour ½ cup honey sauce over the cake.
